Fresh Berry Crisp {Gluten Free}

A delightful twist on the traditional apple crisp, this bubbling berry masterpiece will be the hit of any party–and it’s sooo easy to make.

As much as I love cake and custards, I’m an even bigger fan of fruit desserts. When I went gluten free, over 10 years ago, I quickly realized that making crisps are one of the easiest, most delicious and most exciting ways to construct an amazing dessert for 2 or 20. You can use any type of casserole or baking dish you have that is oven safe. and it’s so easy to make with any fruit you have on hand including apples, pears, berries, or peaches.

Make sure to pick up some good ice cream to serve with your crisp. Vanilla works, but I suggest butter pecan, toasted coconut, blackberry swirl, or other flavors that will add a little more excitement to your finale.

INGREDIENTS

6 Cups or 3-4 Baskets of Fresh Berries

{Alternatively, 2-3 bags of Frozen Berries}

1/4 Cup Sugar or Coconut Sugar

1/2 Cup Brown Sugar

1/4 Cup Molasses

3/4 Cup GF Flour {Or regular flour if you tolerate gluten}

3/4 Cup Rolled Oats

1/2 Cup Chopped Pecans

1/2-3/4 Cup Unsweetened Coconut Flakes {like these}

1 Teaspoon Baking Soda

1/4 Teaspoon Salt

1 Teaspoon Cinnamon

1/2 Teaspoon Ginger

4 Tablespoons Butter

4 Tablespoons Coconut Oil

Juice from 1/2 Lime + Lime Zest

Ice Cream, for serving

 

INSTRUCTIONS

1. Heat oven to 375*

2. Rinse berries and remove any stems

3. In a large mixing bowl, combine berries, 1/4 cup white or coconut sugar, 3 tablespoons of gf flour, lime juice and lime zest. Gently toss with a large spoon, being careful to not crush the berries.

4. Pour into your baking dish

5. In a small saucepan, melt butter and coconut oil

6. Use the same large bowl as your berry mixture, and combine the remaining gf flour with the rest of the ingredients, including the melted butter + coconut oil deliciousness. It should be kind of crumbly, but not dry looking. You can always add a bit more melted butter + coconut oil if it looks too dry. It should look something like this:

7. Scoop this onto your berry mixture and gently spread it around evenly, being careful not to smoosh it down too much. You want it to be airy, bumpy and crumbly.

8. Pop it in the oven and bake for 1 hour, and go do something else. Set an alarm on your phone, so you don’t forget about it, though :). The top should get toasty golden brown and you will see berry juice bubbling around the sides.

9. Let it cool for at least 30 minutes before serving with some delicious ice cream.

10. Sit back and let the compliments roll in, boo. You earned it.
